A Perfect Match: Innovative Food + Wine Pairings.
Tips from Treasury Wine Estates.
Finding the perfect pair for your palate.
A good meal is no longer just about the food—it's what you pair with it—making it even more important to know how the flavors on your fork can be enhanced by what's poured in your glass. In 2010, JW Marriott introduced its Wine Ambassadors Program at properties worldwide, bringing expert knowledge to the guest wine experience.
It’s likely that JW Marriott guests will find themselves sipping on something from Treasury Wine Estates, which has more than 50 brands including Beringer, Penfolds and Greg Norman Estates. But when the waiter brings over that lengthy wine list, how do you know what will go best with your meal?
A rich dish, such as duck confit, pairs well with a Shiraz’s bold, fruity flavor, perhaps robust and generously flavored Penfolds Bin 28 Kalimna Shiraz. Eyeing a skirt steak marinated in hoisin sauce and chili paste, with hints of ginger and soy? Opt for the subtle chocolate notes in a Petit Syrah, which works with the char of the grill and sweetness of the marinade. If you usually pair your seafood with Chardonnay, try pumping up your linguine and clams with a crisp Pinot Noir Rosé, if you can get your hands on it try the Etude Rose of Pinot Noir it’s a favorite at the JW Marriott. For dessert, skip the coffee and try a Malbec. Though it’s usually paired with beef, its spicy notes and dryness are a great contrast to the decadence of a chocolate cake with raspberry mousse filling and buttercream frosting.
When it comes to pleasing your palate, knowing how flavors work together is a good start, but the way to an extraordinary meal can be as easy as taking a risk.
